Each Fat Fridays Virtual Social Club involves a themed discussion and game. The following information came from our June 2022 gathering with the theme of food. The list of recipes and other links and resources came from our group discussions, while the game was cobbled together by Bree inspired by the game Taboo. Within our open discussion, Roxy shared some mutual aid requests, which are also listed below. 

We also had an impromptu process group as this event fell on the same day it was revealed that the SCOTUS overturned Roe vs. Wade. Resources from that conversation were gathered by Bree and can be found here

RECIPES 

The following recipes were written by our lovely Fat Friday regular, Angela! 

Angela’s Mother’s Fried Chicken in the Soul Food Style (that made little chubby Angela come running from her swing set to chow down)

Ingredients for African American soul food Southern fried chicken recipe my mother used to make (from my memory - so I hope that this is right):

  1. 6-8 pieces of chicken with the bone

  2. 48 oz. of Crisco oil, or vegetable oil

  3. 2 cups of all-purpose flour 

  4. 1 ½ teaspoon of garlic powder

  5. 1 ½ teaspoon of onion powder

  6. 1 ½ teaspoon of paprika

  7. ¾ teaspoon of black pepper

  8. ¾ teaspoon of red pepper or extra black pepper

  9. 1 ½ teaspoon of Lawry’s Season Salt, regular salt, or salt substitute

  10. 1 egg

  11. ½ cup of Carnation Evaporated Milk or other milk 

Instructions for soul food Southern fried chicken recipe:

  1. Pour the oil into a deep fryer, 6-quart skillet until the oil is around 1 inch deep.

  2. Heat the oil over medium heat or until it reaches 350 degrees F.

  3. While you’re waiting for the oil to heat up, Place 1 cup divided (defined as:  the ingredient will be added to the recipe in parts and not in the entire measurement listed) flour, garlic powder, onion powder, paprika, and red pepper or black pepper in a medium-size mixing bowl or 1-gallon resealable food storage bag. 

  4. Shake (or mix in the bowl) the sealed bag to combine the ingredients for a homemade seasoning, and set the flour mixture aside.

  5. Pour the second cup of flour into a second resealable bag (or medium-sized mixing bowl) and set it aside.

  6. In another medium-sized bowl, whisk together the Carnation Evaporated Milk and egg, and set that mixture aside too.

  7. Sprinkle the chicken pieces with Lawry’s (or substitute) salt and pepper.

  8. The chicken will go through a 3-step process from here.

  9. First, place the chicken in the bag (or bowl) of seasoned flour and shake or toss to coat the chicken evenly. 

  10. Second, shake off the excess flour and dip the chicken into the Carnation Evaporated Milk mixture.

  11. Third, transfer the chicken to the last bag (or bowl) of flour and shake or toss until it’s very well coated. 

  12. Place the coated chicken into the pre-heated oil, skin-side or the side with the most skin down first, and be careful not to overcrowd the chicken in the oil. You can fry a second batch of chicken if need be to avoid overcrowding by frying all the chicken at once. Just make sure the hot oil remains at 350 degrees F.

  13. Cook the chicken pieces for 10 to 12 minutes, or longer, until the internal temperature of the pieces are around 175 degrees F, occasionally turning to prevent excessive browning.

  14. As the chicken batter turns golden brown, remove it from the hot oil, and allow it to drain with a paper towel under the chicken. 

  15. Serve and enjoy!

Remember to use FDA food safety rules when cooking to have a happy belly.

Angela’s Mother’s Fried Pork Chops (that will make your mouth water)

Ingredients for African American fried pork chops recipe my mother used to make (from my memory - so I hope that this is right):

  1. 8 Bone In Pork Chops ½ inch thick

  2. 1/2 cup flour - all purpose

  3. 1 teaspoon Lawyr’s seasoned salt, regular salt, or salt substitute

  4. 1 teaspoon black pepper

  5. 1 teaspoon onion powder

  6. 1 teaspoon garlic powder

  7. 1/2 cup Crisco oil or vegetable oil

Instructions:

  1. If there is any moisture, blot pork chops dry with paper towels, making sure to remove all excess moisture.

  2. In a bowl, combine flour, seasoned salt, black pepper, onion powder, garlic powder, and salt or substitute to taste.

  3. Dip each side of the pork chops into the seasoning mixture, then set aside on a plate.

  4. Heat oil over medium-high heat in a large skillet and once it is hot (between 325-375 degrees F “using a meat thermometer for safety”).

  5. Cook pork chops 2 to 3 minutes on the first side; 1 to 2 minutes on the other side noting a golden brown color to know when to turn and when to remove.

  6. Remove fried pork chop to a plate covered with a paper towel and repeat with remaining pork chops.

  7. Then serve and enjoy!

Remember to use FDA food safety rules when cooking to have a happy belly.

“TABOO!” FOOD GAME 

Taboo is a word, guessing, party game. The objective of the game is for players to have the group guess the word on the player's card without using the word itself or five additional words listed on the card.
